Laura works at the most vibrant, beautiful produce stand at the Wednesday Farmers’ Market in Portland’s South Park Blocks. She came for dinner Wednesday night and was nice enough to bring bounteous amounts of their amazingly fresh vegetables and greens.
Today I used the fresh basil to make a homemade pesto. I mixed it with a little mayonnaise and smoothed it on some on warm ciabatta bread, layered on slices of fresh mozzarella, sliced tomatoes, a few fresh spinach leaves, and thin slices of salami. I pressed the sandwich on my griddle until it got warm and crisp. This was lunch at my house today.
