Look no further if you want a perfect, tasty, one-bite appetizer that combines flavors everyone loves and is healthy to boot. I made these a couple of nights ago and they disappeared like magic. I made them again last night along with some other snacky foods for an easy summer dinner.
Cooking is not really required here, but rather more what I might call assembly, especially if you don’t make your own hummus. The cucumber is crisp, the hummus is creamy, the carrot adds some color and a nice crunch of its own and the avocado perched on top adds a rich, velvety quality.
I make my own hummus (of course I do!) from a recipe I’ve been using since perhaps some of you were even born. If you have a few extra minutes in your day I encourage you to try your hand at making it.
By the way, I haven’t come up with a name for these, so if you think of a good one let me know!
To make these I stripe an English cucumber with my goovy tool and then slice it into 1/4-inch pieces. Pat the tops of the cucumber slices dry with a paper towel. Add a dab of hummus to each cucumber piece and top with a paper-thin slice of carrot. Add a dab more hummus to the carrot top (for glue) and then place a small piece of avocado on the carrot. Squeeze a little lemon juice over all and then sprinkle with Maldon salt.
