When I buy a bunch of bananas I can never predict if they’ll go like hot cakes or sit neglected on the counter just waiting for the fruit flies to appear. People like them at different points of ripeness, but when they get like this they’re either destined for a smoothie or end up in banana bread. Either works for me!
I’ve expounded on the virtues of this recipe before. A moist, sweet loaf is pretty much guaranteed unless you seriously over-bake it. With my espresso, I enjoyed it this morning with a little bit of cream cheese spread over the top.
